After this Thursday, winter and Christmas are going to take over! But before you welcome all things mint and eggnog ( so excited for those two flavors!) here is a round up of some of my favorite fall recipes I made this fall.

This Thanksgiving, Mom challenged us to write down things we are thankful for and also, not just to be thankful, but CONTENT. There is a big difference and it's one I haven't mastered. These things I list I don't want to just appreciate, I want to be satisfied with them. Reminding myself of how blessed I am helps in keeping content.
~New jeans and sweaters
~Hot coffee
~Mom willing to go out of her way to make things important to me important to her, too
~Dad willing to work hard so I don't need anything
~Our military, so that war and death aren't things I am confronted with daily
~Lots of fuzzy blankets and pillows and a good long book (like North and South!)
~Goals and challenges
~The security of a God who never changes, even when everything else does
~Thanksgiving stuffing :)
My Mom also reminded us that peace goes right along side thankfulness. When we are at peace, its a lot easier to be grateful, but being thankful brings peace. I love how I learn something each year! :)
So maybe you need a last minute Thanksgiving dessert ... well, I've got you covered!
Try this brownie pumpkin pie! I 100% recommend it! But I also 100% recommend letting it sit at least for 24 hours in the fridge ... I was very unimpressed with it when I tried it a couple hours out of the oven. A day of sitting in the fridge and I couldn't get enough of it. The longer it sits in the fridge, the fudgier it gets. The pumpkin pie layer is really more like frosting and is really good. You can get the recipe HERE. Just spread the brownie layer in a lightly greased pie pan and then spread the pumpkin pie layer over that. Bake at 350 for about 35-40 minutes. And let sit overnight!!!
If you are a die hard pumpkin pie person, then you must try this. It is better than pumpkin pie. I just made it again last night and it was once again dubbed one of the best desserts. Ever. Especially with whipped cream on top. Yum.

DeleteOooh you make that pumpkin brownie pie look so good!!! That's interesting--I didn't try it warm out of the oven because I had to bring it to a potluck the next day, so it just happened to have sat overnight before I tried it. Good to know that the overnight rest is a must! If you like texture, you should try the pecan topping on it next time! So so good.
