{Whole Wheat} Lemon Bars

Seeing as we've had 100 degree weather this week, it seems appropriate to have something cool and fresh. Like lemon bars. My brother was walking by as I was zesting the lemons (on my incredible zester I got as a birthday present) and commented "I like the scent of lemon.  It smells so clean ..."


Lemons smell so fresh and bright.  They are one of the most refreshing flavors!  However, if you have cuts on your hands, lemons become your worst enemies. When I was juicing these, I decided it was like sticking my hand in a fire. Real invigorating to say the least! 


These bars have a shortbread like crust and a smooth creamy lemon filling. It's not like cheesecake (I've made lemon cheesecake bars and my mom still likes these better.)  They are rich and do not skimp on citrus flavor. If you like lemon, you will love these. 


I've been busy this week with volleyball, so this is a pretty bland post ("I made it, I love it, you make it!" kind of post:) but tomorrow I've got a post full of all my favorite stuff (most of them not food related!) so stay tuned!


{Whole Wheat} Lemon Bars
Recipe Source:  The Sweet {Tooth} Life.  Adapted from Ina Garten.

Crust:
3/4 cup butter, melted
scant 1 cup whole wheat flour
scant 1 cup all purpose flour
1/4 cup sugar

Filling:
5 eggs
2 cups sugar
3/4 cup lemon juice
2 tablespoons lemon zest
1/2 teaspoon salt
1/3 cup whole wheat flour
1/3 cup all purpose flour

For the crust:  Mix melted butter, flours, and sugar and press it into lightly greased 9x13 pan.  Bake at 325 for 12-15 minutes.  Let cool.

While crust is cooling, make filling.  Beat eggs until light and add sugar, lemon zest, and lemon juice.  Whisk until smooth.  Stir in salt and flours and whisk until all is incorporated.  Pour filling into crust and bake at 325 degrees for 30-35 minutes or until top is no longer wet.
