Chocolate Covered Almonds

There are lots of kinds of nuts.

Health nuts.

Music nuts.

I guess I'm a nut nut.



I love nuts.  Sadly, I am the only one in my family who does.  Isn't that depressing?  On the upside, no one ever touches my countless bags of walnuts, pecans, and almonds.  However, I have no self control with nuts.  None.  Just ask my mom.  My favorites are Emerald's Cocoa Dusted Almonds.  They're pretty pricey though and I thought, hey, why not try to make them.



Cocoa Covered Almonds

2 cups almonds
2-3 tablespoons pure maple syrup
1/2 teaspoon vanilla
3 tablespoons cocoa powder
1-1/2 tablespoons flour

Toss almonds with maple syrup and vanilla until coated.  Add cocoa powder and flour and toss.  Spread out on a greased pan and bake at 275 degrees for 25 minutes, turning every 5-10 minutes.

They are delicious. I ate the entire batch in two days.


UPDATE:  March, 2013.  The pictures above are new, but I decided to keep the pic below from the original post just to remember the difference.  Really, what was I thinking?  The sink drain in the background?  I think I was trying to get natural light from the window or something.  Anyway, hope the new photos are more appetizing!
